The 4th of december/2016,  I had the honor to attended to a very special dinner at Colombian Ambasadors (in Belgium) residence. Was a very exquisite night and his Excellence and his spouse are a very kind and friendly people. Introducing the most delicious Colombian products in a very innovating molecular cook style.

I hope Mrs. Rivera is pleased with the dessert I brought – and specially design and create to her, which I named AMBASSADOR-. I hope they and their family enjoy it the same way I did yesterday.


Ambassador is a very special dessert inspired on Christmas desserts from Cauca Valley – Colombia. Inside is a the typical custard from Colombia with cinnamon and panela, has chops of candied figs. Covered with mascarpone cream cheese with a very Colombian Christmas taste. Decorated with blanched sliced almonds, manjar blanco truffles and chocolate holly leafs with cinammon.
